if you cook a large pot of food what is the proper time to put it into the fridge.
i know everyone does it differently and most people don't get sick unless it's egregious but i hear to not put it in the fridge warm but i also hear not to leave it out long enough to cool.

lets say you have a gallon of stew in a 2 gallon pot with a lid. if it is boiling hot how long should you wait to put the entire pot in the fridge?

Good looking pups. /ck/ is a dog board; we like good pups here (but cat posters can go eat a bullet and make themselves into cat food). You don't want to put a big pot of hot food directly in the fridge, and definitely don't want to cover/wrap it up. It's best to move it to a wide, shallow dish to give it more exposure and allow it to cool faster. The TDZ is a good thing to know about (and is based in science in addition to being government regulation for food industry), but you can honestly fudge it here and there and not really worry as long as you use common sense.

Depends on size and thermal inertia of fridge (ie. how much cold things you stored inside). I put new, and warm food when i am sure it will not raise temperature inside too much. You freeze food to prevent spoiling, which is done by bacteria, and they grow best in 45C down to 5C range, so if you want preserve food make sure it is cooled down from 45C to 5C as fast as possible. Also if you have lid and there is condenesd moisture on it, wash it away with clean water. Those condensed drops are full of bacteria.

as long as it takes to get the temp to a safe zone which is under 40 american degrees.

if you have the extra freezer space, you can wash some old big and small soda bottles and fill them with water. freeze them and put them in liquids that need to cool quick

That condensation is not only from when food was boiling, it happens all the time until almost 4C. At first lid is more or less sterile, but that vapor keeps condensing. And warm droplets with dissolved organic stuff are best place to grow bacteria. So cool pot asap and clean those drops of water.

If you don't remove the lid while it cools then you are not introducing anything organic into the sterile environment you have created so its fine.
