Make the meat into patties, either grill them or sear them in a hot pan. If using a pan be sure to drain the grease between patties, the moisture is preventing the meat from browning.

Red, kidney, pinto. Any, some, or all of the above. My big thing is both ground beef for a thick chili, and stew beef for big chunks of beef to chew on.

Beyond that, my chili needs fresh jalapenos and habaneros at a minimum. Seranos if I'm feeling froggy.

The only liquids allowed in chili are beer, tomato juice, and beef stock, period.

Finally, I like to throw in corn just for some more fiber, texture, and color in the chili. Suck my dick, Texas faggots. Your chili is boring-ass, homogenous bullshit, no variety in the flavors or textures. "Chili cook-offs" breed nothing but wanna-be's and a single variety set in stone.

Texas, your chili sucks. And you know absolutely jack shit about barbecuing pork, for that matter. Literally every other Southern state is better at barbecue pork than you.

I sometimes mix red with black if I make a big pot of Chili. One time we went absolutely crazy and made an ungodly amount of Chili with 3 different beans in it. (White,Red,Black)

High heat, make sure there's a thin coat of vegetable oil on the whole bottom of the pan. Hot pan, hot oil means the water in the meat evaporates rapidly and develops a sear instead of just steaming in it's own juice. The anon that mentioned working in batches and making patties or clusters, not a bad idea. Personally I'll take the slab of ground beef and sear it on one side really well, then flip it and do the other side before breaking it all up.

Nah, more like burrito or enchilada filling. When I make chilli I use ground beef and beans but for my burritos I make the tex-assfag style chilli with chunks of beef braised in a dried mexican pepper sauce and shredded. Both have their place, and they need to stay in it. A bowl of chilli should be slightly soupy with ground beef and beans.

I was gunna make a thread about slow cookers but I think this thread will do. Growing up my parents only used slow cookers for chili and stews. Is it a meme way of cooking?

I'm renovating a house right now and the wife cooks almost all of the dinners for her kids in a slow cooker and jesus christ it always smells fantastic. She makes so many different things in it that didnt even know was possible to make in a slow cooker. Is it any worse than cooking by other methods?

what's the deal with "chili" that has like a tablespoon of chili powder and maybe a jalapeno or two for an entire pot worth? if you don't have at least this many peppers in your chili you're doing it wrong.

>>12973387
slow cookers are memes for lazy cunts. they're supposed to let you cook your dinner while you're at work, but you still have to do all the prep. who wants to get up at 5am so you can chop all your vegetables and brown your meat? the only use you can get out of them are for low effort recipes of just throwing in a piece of meat with a bag of frozen vegetables and a can of soup.

>Vegetables, piece of meat and can of soup

That's basically what she puts in there but it smells fucking great. She makes the kids breakfast on the stove every morning and packs them lunches then loads up the slow cooker and leaves for work
