I'm pretty much the same. American combined with extra sharp cheddar is just right. I also really love to smash up several cloves of roast garlic and spread it inside the bread so it gets all in the cheese.

1 side American slice, 2nd slice smoked gouda and extra sharp cheddar shreds. Thick cut crusty sourdough, fry in moderate heat in a thick skillet or on a flattop in a mix of butter with a quick glug of nice olive oil. Tomato basil soup on the side.
