Do you guys get paranoid as fuck when cooking with chicken? I always instinctively overcook it or never let it get to room temperature because I'm afraid I'll fucking die if I cook or prepare it wrong

I had medium rare chicken in Japan. I thought it was a mistranslation but it was legit.
It isn't awful. I didn't get sick. But it certainly isn't better than fully cooked chicken, either.
