What kinda food would a sovereign emperor eat? Not some kinda joke emperor that's essentially just a king, but like, the leader of a significantly massive and wealthy empire like china or rome.

This isn't some modern bumpkin dictator that dpes whatever they like, this is essentially a very impprtant slave, raised from babby to follow customs and network. They probably spend more meals with strangers than without them. They probably ate more of what their predecessors liked. Whatever has pedigree. They might have some guilty pleasure that they uplift into prestige, but that would probably make up very little of what they actually ate.

Meats. Lots of meats. If his army was victorious in battle, perhaps they'd throw a feast. Intricate desserts that take many many hours by many many people to complete would also be present. Depending on the time period, uncomfortable work environments and working conditions would play a big role. (Imagine having to spend hours right next to a roaring fire for mere pennies to ensure that the turning of the meat being roasted is perfect.)

You can use these elements to demonstrate the character of the ruler and the working conditions to demonstrate the social environment of the timeperiod you are illustrating.

In any case, the base idea is that a lot of work goes into the meals because the ruler is the one who has the money to pay for it.

for a chinese emperor it would be lots and lots of roasted meat (pigs, venison and fowl)

in pre industrial times, meat was a luxury, there is no refrigeration. (The vast majority of poor rice peasants only get to eat fresh meat on special occasions. Other times it was at best a few slices of salt cured meat.)

And the emperor would also get to enjoy rare exotic meats like bears, pangolin, sharks fin, birds nest etc...

There would be lots and lots of fine wine, and girls dancing for entertainment all night accompanied by court musicians. If it wasnt wine he would be drinking the finest tea.

The emperor has a main wife (the Empress), but besides her he will have a whole harem of women. Every night he would pretty much sleep with a different concubine, some emperors even had thousands of concubines-- so for some lower ranked ones they only got to have sex with the emperor once in a few years. A lot of court politics and backstabbing, think game of thrones on steroids. If you got pregnant and your baby is a boy your status as a concubine would be greatly elevated.

but due to this decadent indulgent lifestyle, most chinese emperors didnt live that long (lifespan around 65 years)
