Pheasant and dumplings is one of my favorite things to make in cold weather, but it's more of a stew than a soup. Caldo Tlalpeño is definitely another good one.

Most often in the colder months I'll make a simple veggie soup with leeks, carrot, celery, potato, garlic, beans, and chicken stock (seasoned with salt, pepper, chili flakes, dried herbs, finished with fresh parsley and parmesan). Sometimes I'll make Olive Garden's Zuppa Tuscana clone with sausage, onion, garlic, kale, potatoes and stock + cream at the end. Both are bomb and the latter goes especially well with a good garlic bread.

Honestly can't decide. Every time I think about it I come up with a different answer. In reality when I make soup I'll eat like 8 bowls and then go back for more before bed. Soup is just amazing in almost any variety.
