12911316 No.12911316 [Reply] [Original]

Currently buying a house and going to be living on my own finally. Have minimal to no cooking experience and have to buy my own cookware. Would it be worth it to learn how to cook on cast iron? I know cast iron requires extra steps like seasoning it, that aside how amateur friendly is it?

>> No.12911332

>>12911316
It isn't. Get yourself a lidded 10"-12" non-stick, a lidded 12-14" stainless steel, a quality saucepan, and an 8-12qt pot. CBA to look up brands and prices but that's a great start.

>> No.12911335

If you take the time to watch a ten-minute Youtube video on how to season and maintain it it's completely amateur friendly.
It used to be what everybody used for all their cooking and if some illiterate peasant can figure it out you surely can as well, right?
Don't rush out and buy a shitload of kitchen gear right away, though. Use some hammydowns or get some cheap shit from the secondhand store. Do a little cooking and get a feel for what you actually need. Some people will tell you that a stockpot is essential, for example, but if you never make soup or stock you don't really need one, do you?
Also, you might get lucky and find some decent CI for cheap at those shops. No harm in looking.

So, here's the deal OP imma give it to you straight: two types of cringey retards are gonna flood this board one side will say that a cast iron pan needs to be treated like fine porcelain or you're doing it wrong and the other side will say that because you need to treat it like fine China to go with nonstick. Truth is they're both retarded.

A cast iron pan is cheap and comes factory pre seasoned and that pre seasoning will do you just fine so long as you add a small drizzle of oil to the pan. It is very versatile and works well stove to oven and vice versa and can bake well too. Also, and this is key here, it requires almost no maintenance. When you're done using it simply wipe it out with a paper towel while it's still warm but not too hot to handle. If anything is stuck it scrapes out quickly and easily with a metal spatula. Occasionally something might happen where you get something sugary like balsamic stuck to the bottom. Just boil water in the pan and it lifts right off.

I would say that CI is one of the best for beginners because it is very forgiving for when you fuck up and it is very cheap and will never break. Anyways this thread is about to turn into a shit storm hope you read this and hope it helps. I'm out.

Get a non stick pan and cook with it for a while. Then if you still care enough get cast iron.

Pros of cast iron:
>You can say you use cast iron and humble brag about how 'easy' it is to use and how friggin superior you are to people who don't use it. You can also say the stupid 'PEOPLE IN THE MIDDLE AGES USED IT SO ITS EASY , IT SO EASY SEE' argument
>get better 'crust' on soi boy meme foods like steak

Cons:
>food might stick if you don't season it 'properly'
>you need to figure out what 'properly seasoned' means, you will get bullshit vague answers everywhere: from keeping it in the oven for 6 hours to just put oil on it and cook, even following exact instructions might not do it, you will get vague stupid answers like 'just do it again, works on my machine!' type of shit.
>even when properly seasoned food might stick (you don't say it does, just claim it's PERFECTLY NON STICK BETTER THAN TEFLON and say that anyone who disagrees just doesn't do it properly)
>you have to baby it all the time, can't use soap because it will fuck up, need to use a chainmail to clean it or some other retarded shit, basically a ritual every time you cook (yet cast iron fans will claim otherwise, it's part of the 'meme' to say it's easy to take care of)

It's called a 'meme pan' for a reason. The meme is (and people wont tell you this) is that the main attraction of the pan is the humble brag aspect, the 'achievement' you get for seasoning it 'properly' and the rights to say 'its so easy even peasants did it!'

For actual cooking get non stick and stainless steel. A carbon steel wok for asian shit. That's it.

>> No.12911443

Fuck that, stainless steel and nonstick take care of your needs 100%. Cast iron is only promoted by nostalgic "grandma used it" types and faggots who want to appear unique and interesting. Completely obsolete.

>> No.12911444

>>12911414
Yeah pretty much. And little spots where the seasoning got fucked up tend to work themselves out after a few rounds of frying bacon. The real trick is to not obsess over cleaning it with soap and water every time and to just wipe it clean with a paper towel most times. Occasional washing is fine but daily washing is unnecessary and prevents the pan from self seasoning as you cook. And the more you use the pan the better. I use mine everyday so I'm seasoning on a daily basis basically and since I'm always wiping it clean and adding fresh oil it never goes rancid or anything like that.

first cookware I bought when moving out of my parents' house was cast iron
that was 12 years ago, and I still use it as my primary pan
you really only have to season it once (though I do it a couple times a year because I like it to be shiny)
either get a lodge and re-season it or pick up some rusted to hell thing from an """"antique shop"""" (thrift store)
I like it better than other non-stick pans because if I do happen to get something stuck to it or abuse it in the sink it's really no big deal
I just re-season it and be on my way
I had one teflon pan that lasted MAYBE 3 months before one tiny scratch from someone using a metal spoon to scoop contents ruined it
I also tried a ceramic pan which lasted a bit longer - maybe a year - before it lost its nonstick properties entirely
probably from scrubbing too harshly in the sink
99% of my cooking takes place between two 10 inch cast irons and one 7 inch cast iron
I have a 7 inch all clad that I use for sauces sometimes (especially pan sauces), and then I have some aluminum sauce pans for the majority of my sauces

Lol nigger it's fine a seasoning is a polymerized bond between the iron and the oil. You would have to exert enough strength to gouge deeply into the iron with your spatula. A light scraping with the flat of the spat won't do this. I don't care what you've read online from a memeblogger. A good seasoning is EXTREMELY durable.

how's this for specificity?
>lightly coat pan in vegetable oil
>bring it to the smoke point
>smoke it until it stops smoking

there ya go - your pan is now seasoned
the entire point is to break down the fat into the glassy smooth nonstick substance
generally it's not fun to do this inside due to all the smoke, so I personally do it on my grill

Get a cast iron pan, a cast iron Dutch oven, a saucepan, and a wok. The Dutch oven is the best piece of cookware you can own. You can deep dry with it and make a ton of classic French and American one pot meals like stews and braised. The wok is for stir fry and curries and fried rice. The saucepan is for sauce while you can cook the pasta or rice in the Dutch oven. The cast iron pan is for anything a normal pan does. You do not need a nonstick pan. Just oil the pan after use and wipe it clean with a paper towel. I hear my dutchie and cast iron pan in the oven at 400F while prepping other things. I made bacon, fried hash browns in the grease, and fried two eggs in that for breakfast this morning.

Cast iron doesn't do well with acidic stuff but can be great for searing steak/meat and some other stuff. Some nice heavy stainless steel pots and pans are versatile, durable, clean easily, and don't require extra maintenance. Non-stick pans can be good for eggs especially since they will heat up a lot faster than cast iron and will be truly non-stick for eggs out of the box. I'd say to get mostly stainless steel pots and pans plus one non-stick pan and one cast-iron pan.
