Because they've come to be trusted over the years for actually recognizing excellent restaurants/chefs and holding them to a high standard. There's certainly nothing arbitrary about being awarded a star. Restaurants work their dicks off to reach that level of achievement. It's the culinary equivalent of a platinum album or a sports hall of fame trophy thing. Did you really need that spelled out for you?

I've been to a dozen 1 star restaurants, two 2 star restaurants, and did the French Laundry (3 star) around a decade ago. Every one of them lived up to the hype, but if you're not really into good food the 3 star places will probably piss you off, because they're kind of expensive. I'm occasionally an industry anon but have no desire to work in a restaurant aiming at Michelin status (maybe if I won the lottery I'd stage in one for fun).

I kind of agree. Obviously some objectively bad restaurant can't get Michelin stars. But still, it is just a tire company carrying on a tradition which was built on getting people to travel more. Some restaurants that deserve it probably won't get one.

He should try being more artistic with the food. Use VHS tapes as plates. Make the customer search for their food in a bowl of round rocks. Meat should be hanged from a clothesline. Eggs should be in a jar.

Keep portions small but prices high, so as to give the impression that your restaurant is a money laundering operation. The customer should want to go get fast food on the way home after experiencing your restaurant. That's how you run a fancy restaurant.
