the article is pretty spot on. especially about the 80/20 beef. because fat means flavor you can use other cuts but it will be too greasy (too much fat) or too dry (too little fat)
burgers are made to be customized to the cooks desires so if you dont like pickles you dont have to put them in. if you want a egg or beetroot you can.

I'm going to shit talk canon here and say Tomato's usually aren't worth it. Most tomato's in america are ass, just watery and flavorless pieces of shit. If you got good flavorful tomato's by all means, otherwise i'd leave it off

Again, hot take, going to disagree. The flavor of a good cheese will be lost in the burger, the cheese you want for a burger is melty and salty and oily and smooth mouthfeel. American cheese is perfect for this.
