I get some really thin flank stake and season it with salt, pepper, cumin, chili powder, smoked paprika, and a little tajin, then grill that shit.
Next I dice some white onions and cilantro. sometimes I will also add jalapenos or a pico de gallo.
Next I throw soft corn tortillas on an oiled griddle for like 20 seconds.

Assemble that shit and enjoy the fuck out of a real taco, none of that hard shell white people texmex garbage.

Seriously, this. Im still at a loss why people dont raise their own cattle for taco beef. If you raise them, sell them, and reinvest the money back into your own herd in (roughly) ten seasons youll be getting your beef for tacos for practically free. Its cheaper in the long run.

It's pretty simple to do and btfo of the packaged shit. I was raised in the midwest and taco night was basically what yo described and eventhough it's shit compared to real mex tacos, I still hanker for it but use my own spice blend.

>remove from pan and saute diced onion and chopped jalapeno
>add garlic, bay leaf and cumin and saute for 1 minute
>add tomato puree
>add browned ground beef
>sprinkle ancho and chipotle powder to cover
>Stir and add stock
>cook on low 1 hour, season to taste with salt until desired consistency

I buy the old el paso doritos tacos knock off shells and some high fiber tortillas. Ground beef, old el paso seasoning since I'm too lazy to make my own, add some garlic, top with cheddar cheese, sour cream (though I recently discovered greek yogurt is an interesting substitute), corn salsa or just corn if Kroger doesn't have corn salsa, and mango habanero salsa

Seconding the Greek yogurt as a sour cream replacement. Often cheaper, healthier, and without comparing side by side you don't really notice the difference. Especially when eating as a condiment. Makes dips etc just the same.

From bottom of the shell to the top:
>warm, Shredded cheese (tex Mex works well, or shred your own Jack)
>hot ground beef with whatever taco seasoning, drained of fat/grease as much as possible
>lettuce, tomato (drained), Jalepeno, whatever veggies we made that day
>guac
>sour cream/yogurt/salsa as preferred, layered in the middle if your mouth is small

Each detail has the sole purpose of being less messy. The warm cheese melts under the meat and creates a seal on the inevitably cracked taco shell, so your tomato/salsa/condiments whatever don't leak all over your hands. Offset the generally dry details with the condiments, put them in the middle so you get some with each bite if you don't take big bites.

Fucking hate messy food. We're not animals. If they're particularly crack-prone shells, warm a tortilla with cheese on it and wrap the taco shell (can then omit the cheese layer in the shell, fill with more dead cow). Cheese sticks the tortilla to the shell decent enough.

I prefer the soft burrito wraps instead of the hard shell tacos but:

>fry ground beef in frying pan.
>mix spaghetti sauce with taco seasoning sauce pack, maybe add some salt, garlic, onion powder, black pepper seasoning into it
>heat up black can of black beans
>mix ground beef, beans, sauce all together in pot
>heat pot up so mixture can get nice and warm
>slap some cheese across burrito wrap and then add meat and beans
>wrap up burrito or just eat taco

Sometimes I'll sprink some cheese on top ,but usually I just let it sit for like 3-5 minutes so the cheese in the wrap can melt around the meat and beans. Also, I use the Ortega taco/burrito kit thing, not that shit.

I make my own taco seasoning.

1 Ancho
1 Chipotle
1 Guajillo
1 teaspoon cumin powder
1/2 t Onion Powder
1/2 t Garlic Powder
1/2 t Oregano
1/2 t Coarse Sea Salt
3 strips smoked sun-dried tomatoes (secret ingredient)
Throw it all in a spice grinder or mortar & pestle. Grind it fine.
1 lb. of 80/20 Ground Chuck
Saute beef with the spice mixture until done.
Drain & serve with the toppings of your choice.
The spice blend also works with chili.
