I went to an asian store to buy a few ingredients, one of which was mirin. I didn't know what to look for, so I ended up buying Kikkoman "Kotteri Mirin" sublabel "Mirin Style Sweet Cooking Seasoning"

I got fucking taken, didn't I? this shit isn't mirin at all. the ingredients are: Corn Syrup, HF Corn Syrup, Water, Fermented Rice Seasoning, Vinegar, and then a bunch of preservative chemicals.

Anyone have any experience cooking with mirin or this seemingly fake substitute? Is it good enough? It was cheap, and I don't think I saw real mirin in the same aisle. thanks cu/ck/s

The kind of mirin you bought is used for seasoning on finished foods, I think. Basically a dressing.

Look for Mirin bottles with "本". I use Takara brand, ingredients should have Koji in them. It's a type of mold fungi used to ferment the cooked rice, turning starch into glucose iirc.

If it is not labeled "hon mirin" (true/real mirin), it isn't mirin at all, it is mirin seasoning (often called "mirin fu").
