I just started a lamb leg roast approx 2kg. Goes in oven with light smothering of olive oil, salt, pepper. Usually I start it on high heat 230C then after 10 mins turn it down. When I put the veggies in under it with an hour to go I add rosemary to the lamb.
Anyhoo I got a phone call and got distracted came back to kitchen 10mins late to turn it down to 160C and olive oil has dripped onto roasting tray and is smoking!! Not smoke your kitchen out smoke but can smell it’s burnt oil alright.

do I need to throw roast out or do I just forgoe making gravy outa the pan????

Weighed my options, tell the waiter and get into a discussion of "how do you know its a sirloin and not a ribeye?" as well as make a fool out of myself to the people I am with and then they'd do god knows what to whatever food they would try to replace the sirloin with, or don't say nothing, enjoy my sirloin. I did the latter, enjoyed my sirloin, and then complained to the website about it.

Later on, the manager of the restaurant actually calls my phone number which I stupidly left on the website when filling a complaint, and tries to get me to come for a free meal, as if, he doesn't understand the complaint

Sure, a couple of times, and/or the reason was that I didn't see much on the menu I wanted to eat at that moment at that time, irregardless of prices. Maybe I wanted something smaller, for instance. I might be looking to sit down while traveling, just to cool down, get off the feet, use a nice clean bathroom or just be hydrated. I might not want to eat a full meal if I have plans later. Or, I might be overwhelmed by some bar stench or sudden hint of mildew or mold or something I'm like, oh hell no, I'm outta here.

Usually, though, I check a menu outside on the storefront, or quick research online, like if i am walking by, or simply ask the maitre'd before sitting down if I may peek at a menu first. Decision made, then I sit down. Don't be afraid to ask for half portion of something, or if you can order an appetizer as your main, or simply a side salad and a baked potato. Do what you want. Sometimes you can enjoy a drink and a dessert and a nice waterfront view. If they're not busy, they don't care.

I hate the whole "come in for a free meal" kind of thing. Yes, I get that most people don't complain in person, and why they do or don't want it fixed on the spot. But, I'm not usually going back if it's two strikes.
If I wanted the issue fixed because I love the restaurant and don't want them to piss off anyone else? Then, I would go talk to someone in an aside and kind of manner about my expectations. I refuse most offers. You can be wasting your effort a good deal of the time, and the more mid-tier a place is, the more fraud they face and project onto you. Customer training is kind of a forgotten art anyway.

I'm done with the smear them online approach, though. If I don't have anything nice to say online, my time is more worth just letting it go.. I did a webform to Panera corporate comments once about how quickly bad their new location had become since new management, wet dressed overlogged soggy old salad greens, wilted sketchy toppings, unclean everywhere from bathrooms to unrefilled coffee canisters, dirty tops of sandwiches where really grubby gloves got mayo and stuff on top making everything a mess to eat, long lines, no eye contact, and really just a complete turnaround. They had only been open a year and in a very rich and demanding part of town with tons of competition. The next morning at 6:30am, waking me up, my cellphone rang with that asshole manager himself and the regional boss of some sort 3-way calling (with who else on the line, possibly too), and I got very aggressive "come in so I can see you" kind of offers that were just veiled angry threats disguised as apologetic free food offers. I don't need free food. If I was concerned about my budget, I wouldn't eat out wherever I eat all of the time, let alone get $5 coffees or $15 soup and sandwich combos. Whatever. Why they didn't surprise visit that location and do their own walkthrough to assess a report, address the issues, inspect, fix, etc, I have no idea.

My family did this last time we went to Japan 77. We already knew they were going downhill and only raised their prices, but we went anyway. The place was completely empty at like 5:30 on a Thursday. We sat down and saw the prices had been jacked up by another $5, putting it at about $50 per person. My dad had us get up and leave within 5 minutes of sitting down. The hostess chased after us and yelled "Wah happen???"
