I feel like it's so very predictable and it doesn't have a lot of variety. Pretty much all of it is brown in color, either fried or deep fried, overwhelmingly sweet, served with ketchup and processed cheese.

Chinese food has the most variety of any cuisine in the world. That's what makes it best. Variety is all you have after a while. The home cooking can get a bit boring since each housewife has their own style that they reproduce day in day out. But if you travel around a bit, or just go to a restaurant that serves any number of regional cuisines, you can see how different it varies from region to region. The best is Sichuan. No food on earth beats that for intensity of flavour.

my favourite part of chinese food is the little places with a grandma sitting at a table just cranking out fresh dumplings. They're everywhere.

It's pretty rare in food that you can get something so fiddly and labour intensive, that takes so much skill, for so cheap. Well under $10 to eat your fill in the west and a quarter that in China.
and there's so much variation, fried, steamed, in soup, rice flour, wheat flour, shrimp, pork, egg, chive, etc etc etc
