I do, even organs like the heart, intestines and whatever is edible.

Bones are great for stock and after they are used they generally end up clean.

If you have never eaten the feet of an animal you are missing out, they've very gelatinous parts, when cooked right. The only thing I have never gotten used to eating is the animals blood.

A gelatinous meat is way softer and retains the flavor of the sauce you cook it in way better than a lean or fatty cut. Like the meat of a calf that's younger than 3 weeks.
