Normally I make my own rubs, and spices in bulk from a spice shop. The owner kicked me down a smoky molasses rub that I'm using today.
I saved some sauce I made from the fat caps off last weeks pork butts, will mop with that.

I did a 4oz log of garlic & herb chevre (from Giant) and a 1 1/2 cups of fine shred cheddar (Tillamook). It was a little dry so I added 3ish tablespoons of sour cream and a tsp of honey for a pinch of sweetness. Then added one minced scallion because I love scallions. Split between 12 regular sized jalapeños pretty well with a few tbsp leftover. Ended up eating it while cooking. Sounds really fancy but it's honestly all shit I had on hand minus the chevre which I chose to use instead of cream cheese.

Dickered

Brown sugar, rub and butter in foil, meat side down. Back on smoker at same temp for another two hours.

These are the cut offs after three hours. Once rested will be frozen and used as stock for fresh beans and tomato sauce.

Cooking a jack. It's laying on a bed of onions, theres olive oil, lemon juice, garlic and more onions between the bones.

After foil, returned to smoker for about an hour, plus mopping

Looks fine so far

Don’t boil more than a few minutes before taking out the veg as that makes the colors pop

Home made croissants and pan au chocolate. Great mouth feel, fluffy but too salty. The recipe called for over a tablespoon of salt (yes I double checked) and it really made the resulting pastries overly salty to the point where it was hard to finish a croissant without a large quantity of milk
