The top looks great, you just need to work on the sides, get longer offset spatula and work on single long strokes instead of manny small ones. I suppose that a Cross-shaped cake would be very awkward to work with, so I do not know if I could have done it better the first time.

Now, for a more serious and harsher comment, what were you using as frosting? I do not know how much of it is the picture quality, but it looks very grainy and thick, the frosting was detaching itself from the tip in a irregular way which affects the final look. Which is a shame since you put a lot of work into it

Whilst there is a lot more effort put into the looks of these things than the flavours and they tend to to all be takes on 4-5 different items, they do put a lot of effort into the flavour. There's generally a bit focus on getting a variety of flavours into them so everything isn't just overpowered by one aspect like in shitty fondant covered cakes.

You put it into your mouth, get the flavour of the coating or icing, bit into it and get the texture of the pastry, the cream/mousse wipes your wipes your pallet a bit then you get a strong hit from the bit of filling in the centre.

The only one I have had was a classical one with thinner layers that made it easer to cut It was flaky and very good, but the one I posted seems very thick, I am not sure how your are supposed to eat it without pressing down everything in the first cut. I have no idea because I am poor and I have never set a foot these, but here is the list of prices for other cakes served in the Honk Kong hotel in Hong Kong Dollars. The smallest one is $50 dollars. I don't think they sell slices, only whole cakes in smaller diameters.

And about the caramel shards, I know that you are supposed to add baking soda to prevent large crystals from forming, it makes it so the caramel breaks in your mouth in small pieces and gets dissolved by saliva almost immediately. My chef told me this was done mostly to stop people from eating what is basically glass, it also improves the texture.

Not that anon but once a kid brought a cake to school and it was the littest. It was a jungle themed cake (idk why) with sparkly blue frosting for the amazon river (idk why we dont live in south america btw) and it was the coolest thing ever.

These are Czech kolaches, I don't know if I have ever eaten them before, but the Polish bakery down at Mimico, Toronto (Universal Bakery) has these danish like things with an egg custardy center that I think is like the kolache on the far right of pic.

I think I remember seeing something like that (though I did not taste it) in another part of Toronto, no Polish, I think this is just an eastern european pastery, so you just find your eastern european bakery!

The center kinda taste like egg tart if it was kinda soft bread as well, I love it, it was sweet but not too sweet. Might pick up some this week, freezes and thaw rather well.
