I'd be down aside from the eggs. I don't get why SE Asians always insist on burning their eggs. I assume it comes from a culture of cooking everything in a super hot wok/pan where there really isn't any choice but to make disgusting brown plastic eggs, but it's kind of gross. Just buy a $10 non-stick egg pan and make proper eggs if you're already going to put that much effort in.

Crispy eggs and Rice just go together. I like it. I can make the pepin omelet, but if im eating rice and spam, the eggs need to be crispy. If not, you under cook them and mix it in with the rice, then add a half tablespoon of gochujang and sesame o, and mix it all in. Wa la. But yeah otherwise, crispy.

One thing I do know and this has worked many times for many different things including finding restaurants is that if in a city just call the embassay or consulate and ask nicely where they go. They'll likely give you a good suggestion or two. Regardless of what people think, not everyone here is a goofball.

That's just because that's probably how you were raised because your mom was lazy and had too many kids to cook properly. There's plenty of texture already there with fried spam and rice. The eggs should be smooth and runny and basically part of the sauce.
