Nothing is special about them. They're literally just a kind of dumpling, in chicken broth. Why are they talked about? Because 20th c. American Ashekanzi Jewish culture just ended up with a lot of people writing books, short stories, screenplays, etc. So we end up with a shitload of cultural material in America about grandma's terrible bland mush and people are inordinately fascinated by it. The whole "Jews control hollywood" thing. That isn't just something people made up.

I made it this way once and it was good, it was almost like having meatballs in broth because of how savory it all was and the matzo balls being dense. Someone else said they didn't like the dense matzo balls but I find lighter ones to just be soggy and unsatisfying.

Another example is just fucking up falafel. Falafel are made with fava beans, with a little chickpea flour to act as a binder. Israelis ruined it by using chickpeas only, this changing the taste and texture and making it worse in every way.

Yep. In Brooklyn there are a lot of kosher Chinese restaurants. Beef and chicken are used instead of pork. The rules are pretty easy to follow since chinese food does not mix meat and dairy. The largest issue comes down to produce and insect infestation. Produce needs to be meticulously checked for insects.

Outside of Orthodox areas, most Jews in America are secular/Reform/Conservative so they don't really care about kosher laws and instead prefer to eat "kosher style," i.e. no pork/shellfish, don't mix meat and dairy, etc.

I miss my grandmother's matzo ball soup. She would make it for me every weekend. During her letter days before dementia went full throttle, she would sit next to me as I ate her soup and she would tell me her recipe. I didn't care about it and never really listened. Nowadays I only have matzo balls once a year, when my mom makes it out of a store-bought mix, and serves it in a veggie soup because of vegetarian family members.
