One of my favorite Mexican restaurants ever uses green peas in their guacamole to cut down on how much avocado they use. They've been making it that way for over 30 years, and it's absolutely fucking DELICIOUS. It's so good, I reverse engineered it at home so I can make it myself. They serve it as a dip on the table with the salsa.
Also, avocado prices aren't spiraling because of the demand, they're spiraling because there wasn't a good crop this year. There was too much late rain this spring as the fruits were developing, and a lot of them rotted on the tree before they could mature. Same thing happened with the cherry crop this year.

Yeah. They got too much rain at the wrong time, and whole orchards of cherries just rotted on the trees. It was a sad fucking sight. You can still find some, but they won't be as cheap or plentiful as they normally are.
However, the peaches and plums this year are fucking ACES. Best peach crop I've seen in a few years. Really juicy and sweet.

I'd imagine you'd just fold avocadoes into mushy peas.

Mushy peas is pretty easy. Soak your peas overnight in water with a tablespoon of baking soda. Drain, then boil until tender. Strain off most of the water, then bring it back to a boil and simmer for awhile. Then mash them.

You'd probably want to let them cool down. I'd imagine you'd go at them with an immersion blender, too, for that creamy texture.

1. Make a salsa verde with tomatillos, poblano peppers, onion, cilantro, and jalapenos or serranos (you can also just buy one of those small cans of salsa verde, but it won't taste as fresh)
2. Cook some frozen peas until tender.
3. Use equal amounts of peas to avocados (so you're cutting your avocado amount by half)
4. In a food processor or blender, blend peas, avocado, salsa verde to taste, lime juice, and salt to taste.
5. Chill in the fridge for a couple hours so the flavors can all blend well.
6. You can also add some sour cream to this to make it extra creamy if you like.
