Professional recipes typically do use mass, but there's very little difference in volume for small quantities of most items. We just assume most people are fucktarded if you can't use volume. Admittedly volume is a bitch with flour, but again these are usually home recipes that were passed down before a scale.

1) they're always accompanied by storytime. Bitch, idgaf what you were doing the morning of Tuesday the 18th of November in your third year of primary and how hubbie's bowel obstruction is doing, just tell me how to make some fucking gumbo
2) ingredients don't tend to be organised according to order of use.
3) many things are branded. Campbell's™ cream of burger soup, Hershey's™ """"""""chocolate"""""""" coated burgers, Kellogg's™ burger flakes, Pillsbury's™ burger flour, etc etc etc

We also use tablespoons (15ml), dessert spoons (7ml), teaspoons (5ml; we call them "coffee spoons," though) and cups (250ml). The only time we use "ounce" is for ground coffee; one ounce of coffee brews enough for four people.
Everything else is metric, though we use prefixes which are uncommon elsewhere like hectograms (100g, shortened to 1hg) and decilitres (100ml, shortened to 1dl). Things sold at supermarkets are often listed according to price per hg rather than kg.
