Eating fromage blanc like an actual cheese seems weird to me, unless it's season I guess.
You could try eating it like you would eat yogurt, like with sugar or jam or something. I know it's a cheese, I know what the name means, but it's very weird to me seeing fromage blanc wrapped like a cheese in your picture, I have mostly seen it in yogurt-like pots

It is. Thing is, it's all tucked away out of sight and only discoverable by the enlightened and determined. OP here, hello friend. So far with what I've tried of NorCal cheese, I'm not a big fan of the cow milk stuff. From Nicasio ive tried valley square and fromage blanc, not a fan of either. From cowgirl I've tried tam and hawk, didn't like either one. I've also tried shit from this smaller creamery called stepladder that I didn't enjoy at all. So far, I've liked the goat cheeses way more and I've also been eating a lot of sheeps cheeses from this one smaller creamery that sells at my farmers market which have also been dope

Great thread guys. This link will help you find all the great cheese in California. OP it sounds like you've had a few of the larger operations stuff which is great! But it's just the tip of the iceberg there's also fantastic sheep's and goatsmilk producers if you aren't into cow milk so much but there's different cow milk that i prefer than what you mentioned. I work for one of the creameries on the map but I won't say which.

You ALL DEFINITELY need to hit up Rainbow Grocery and talk to their mongers. If you're lucky the legend himself, Gordon might be there he's worked in the industry for YEARS and knows everything about the state's cheeses and carries the best selection in the state hands down.

What're some of your favorites of Cali? I wanna hear your recommendations for cows milk and your opinions on the stuff I listed.

When it comes to goat, I've tried cypress, Laura Chenel, and Andante. The only sheep focused producer I've even heard of is weirauch which is the one that's at my farmers market. I'd love to hear your recommendations for sheep/goat too.

I live in the east bay so I'd probably never make it over to rainbow as I don't even have a car. However, I do live somewhat near a cheese shop that's got a pretty big selection so odds are I'd be able to find whatever you recommend at my local spot
