You can't really tell what most specific heart attack cases were "caused" by, if it was even any one cause at all. Being overweight is the big predictor that's easy to correlate with heart problems, as are smoking and aging.
I think people try to hard in these cases to assume somebody did something wrong in need of "correction." I would probably just take it easy with some light exercise and eat reasonable amounts of basic fresh foods (e.g. a simple turkey sandwich with white bread instead of a box of hot pockets).

I use this guide to give me the right cooking time. You can season the chicken with only salt and it'll taste amazing. You can also add garlic, herbs, spices, or premade seasonings. Put a bunch of random veggies underneath the chicken and you have a side dish. Carrot, onion, and celery is a good start. You can also add mushrooms, yams, squash, etc. Just trim the fat from the chicken and skip making gravy to keep the fat down. Don't add any butter, either.

You can rub a while chicken with greek, cajun, french or bbq seasoning and toss it in the oven spatchcocked, or chicken breasts on the bone (skin-on), in a baking dish. Literally 350F uncovered til brown, then cover it. I like to marinate in lime juice, black pepper, paprika olive oil, chopped garlic under the skin (citrus is a nifty trick substitute for salt use). When browned, I will dump in a bag of valencia rice, a chopped onion, a can of whole tomatoes with juice and 2 cups of water and cover the baking dish, and the chicken bone drippings make the spanish valencia rice as creamy as italian risotto, with lots of lime, chunky tomatoes, and roasted ionion and garlic flavor.
Any time you can thin the chicken portion with more veggies, the less deprived he will be...so think about chunking up peppers, onions, eggplant, zucchini, butternut squash (can buy it frozen in a bag), and a one pot dinner of browned chicken cubes is nearly done. Pot of brown rice, saucey melange of veggies and chicken. Think about lite coconut milk and thai curry paste finished with a handful of basil. Stewed italian style tomatoes (low sodium) or roasted tomatoes.
Fish can be made less salt filled or oily by thinking mexican. Fresh mango-lime salsa over a baked or steamed-in-foil packet fish adds a ton of flavor from the acid. Baked tortilla chips sprinkled with lime and chili powder can dip into a fresh (steamed and chilled) shrimp or crab ceviche.
Blackened seasoning makes good flavored chicken or steak that can top a big bowl of salad, whether caesar or cobb style.

I love a yogurt marinated chicken, which you can do overnight right in the baking dish. Prep at bedtime some chopped garlic, raw ginger, garam masala or curry powder blend or jerk seasoning blend (none have salt). Saute the garlic briefly in olive oil, remove from heat, stir in curry powder to warm it, stir in raw ginger, and when cooled some, juice of two lemons, stir and combine with a tub of greek yogurt. When cool, pour over chicken in baking dish, cover overnight. Remove dish to oven (no need to preheat), covered in foil, and 350F until thermometer done, remove cover to brown, and finish with cilantro. Veggie side if desired. Brown rice. Pita. Anything you want. I like to bake chunks of a ripe plantain and peas n rice if doing jerk style. Indian style curry, I'll throw a bay leaf and cumin into the rice pot. Greek style would be no ginger, plus thyme marjoram oregano, even more garlic and lemon. Roasted veggies can be added to the yogurt, and the yogurt quantity can be doubled if you want more "sauce" to enjoy with your rice.

Mini meatloaf (big patties) is one answer for people not so much into the fat or red meat beef, and be frozen and reheated one by one. Pulse in the food processor (or buy a little one for dad), batches of mushrooms, red peppers, onion, carrot, etc. You can 50/50 the mushrooms and beef, as long as you bind it with eggwhite and bread crumbs. Top with chili sauce. Turkey works if you add more herbs and cover it to prevent drying out.

You can bread meats like pork loin and oven-fry them. Wet them with mustard, then adhere panko or homemade chunky breadcrumbs (heels of bread), herbs like rosemary/basil/oregano/cilantro and citrus zest. Bake until crispy. Sheet pan dinners.
