A maple-glazed pork tenderloin recipe asks for bourbon (mixed with some other ingredients) to deglaze the pan
I have scotch, irish whiskey, or sherry. Which should I use?

For similarity, Irish, definitely not scotch. Sherry would be great in general but maybe not for your maple glazed recipe.
