I'm a white girl who grew up in the deep southern states of America. Soul food is and was pure joy for me.
I had an old fat black grandma next door who would baby sit me after school until my mom got home and she's the one who got me interested in cooking. She'd have me help her prep things and shell peas and wash greens and taught me how to filet fish and separate chicken into parts. She was wonderful. She gave the best big warm squishy hugs and everything she made, she'd share with me so that one day I could make it for my own family. I miss her very much. She was one of those people in your life you never forget and love forever. Every person should be so lucky to have such a person in their life.

Outside of a few items, soul food is diner food. It's homecooking pan fried meats, think items cooked in a cast iron skillet, from fried chicken, chicken fried steak, pork chops in cornmeal, etc. Vegetables will be right from the fields, deliciously fresh varieties of beans or greens, slow simmered with a bit of salt pork or ham hock, and flavorful. Calling it soul food is where you also include pieces and parts other don't always want to cook with, due to be fussy or being offal meat. So, gizzards, chicken necks, smoked turkey wings, and other scrap meat lovingly prepared. It's rare, that. Most soul food is just someone's mother who made fat kids happy using butter in everything and serving giant quantities. The Caribbean didn't have cows running around for the most part, just canned milk and mixes, so anything cheesy is a luxury. In the 70s, there was still government cheese at a reduced cost, think mealy Velvetta, so mac n cheese is the poor man's way to bring in nutrition from dairy from those from that era or those places. Therefore, mac n cheese is the special casserole added to all party time family celebrations. These two things, the offal and the mac is what distinguishes delicious home cooking farm to table style from just being Southern, or midwest or any other regionality. Desserts vary a bit. Nothing to do with cost, sweet potatoes were simply Southern, and pumpkin Northeastern, and when Southerners moved, they took their preferences with them and so the family legacy and culture began.
What is soul food today? Sadly, it's laughter in the face of health, most of all. Poverty and lean times eschews good sense about nutrition and care for one's long life. Reward yourself in the now and present. So, things simply haven't disappeared off of family tables as readily as it has in other communities that went low carb/low fat.

In Miami, I had the old Cuban couple behind my house growing up where I got shown the right way to pick a mango (laying on a quilt under the tree and catching them as they fell, how to pressure cook a pot of dried black beans with bay leaf and dark sugar, how to rub a pork roast with bijol, sour orange, garlic and slow cook it before there was ever a caja china on the market. I remember silk covered antique chairs and pillows, real linen sheets, and silver that could have been in Versailles. I remember visiting the Cuban bakeries where loaves were still cooked on a single blade of palmetto frond to stabilize the dough and also cut into it midway during baking rather than a razor blade. I remember birthday cakes with layers of flan custard, pineapple and guava between rum soaked sponge, with fluffy boiled sugar icing as crusty as a meringue cookie with flavor of marshmallows.
These influences made my actual memphis-born paternal grandma's southern cooking seem like health food. A side of sliced ripe field picked tomatoes, parboiled to peel them first, of course. Vidalia sandwich with durkees sandwich spread. Speckled butter beans served alongside steak from the grill. Spoonbread (northern?). Slaw made with cider vinegar. BBQ pork loin cooked on a rotisserie with hickory chips. Whole hog BBQ with carolina vinegar baste. Fried okra, quickly sliced then dusted in just simple fine cornmeal sticking to the okra before frying, drained on brown paper bags. Queen corn on the cob. Mustard greens were preferred over collards or turnip, had to go to a ghetto market to find them fresh. There was an occasional frog leg in the freezer, but mostly stone crabs in there. Was not soul cooking, just a lot of fresh vegetables and higher quality meat from a butcher who aged steaks. I had to go to a restaurant to get fried liver.

There are a lot of Cubans who either have long standing grievances with the government or simply never want to go back so it creates a very tense situation for people with family in both countries. Also, depending on your family’s feelings financial/political standing in Cuba, you can viewed with suspicion if you spend too much time in the states or frequently travel back and forth, which may result in compulsory labor to prove your allowance. While Cuba is technically “open” now, much of the old ways of doing things are still very strong.

Depends on where you are but generally there are two stratas of southern food a high brow French influenced tradition and stems from the dining courses served in the manors of the wealthy southern planter class and then another strain that was a much more provincial patois of the common person which was similarly influenced by French cuisine as a consequence of the service nature of slaves and poor whites in the highly stratified antebellum society.

This secondary working class cuisine is what came to be known as "soul food" it pulls heavily from a diverse group of European and African traditions and the further north one goes the more prominent and dominant the English influence becomes.

To see the origin of many famous themes of soul food and the continental influence on it really study the food culture of New Orleans. It was the wealthiest and most cosmopolitan city in North America until after the Civil War and it shows in the food culture. Being a French speaking colony at times controlled by the Spanish so this is where you get your sausage styles, braised greens (always in 3 for good luck), etouffe, gumbo, jambalaya, fried chicken etc. from while European tradition contributed the technique for most of the dishes while Africans informed the flavors (subbing bell pepper for celery in soffrito for instance). The more Anglo tradition of the colony like the ones along the mason Dixon line the more Anglo the dishes like macaroni and cheese and country hams but even here French cuisine made its mark like in the super flaky pastry style biscuits. Then you have rice which is a staple in the Carolinas and delta regions whereas elsewhere plain corn "grits" are common basically a runnier textured polenta but grits probably came first.

Old school bakeries, a real labor of love. It's chilled, sliced and placed in between the sliced layers in the pan. The whole cake would be soaked in syrup, which might taste of nothing at all, or a bit like rum or vanilla. Pic is from a yelper who got a messy picture of a sliced cake at Ricky Bakery, a small chain keeping the party catering going. You can see the whipped marshmallow-y merigue icing there, and this cake has two flan layers, where some cakes will have 1 layer of fruit in there, pineapple or guava.

This. You go to S. Florida for good Cuban food, and expect not to have a single authentic or well made dish the entire time you're in Cuba (sad but true). It's only been in the last 10 years people were officially allowed to garden or grow a business in their home. It's been starvation mode for 5 decades of Hell down there.
I actually wouldn't feel safe to go there at all without proper government relations with my home country and a working embassy, unless I was dual passport or extremely monied and powerful, which I'm not. It carries the same risk for Americans as Russia or NKoren dreams for travel. It's not good.

Maybe in 20 years? There will be some eco-tourism infrastructure outside of the city, where you can enjoy some unspoiled reef diving, or rain forest trips to see birds and lizards, but it's not at all there yet. Internet and freedoms can fix it quickly, but for now, it's not happening.
