I've been thinking about what kind of restaurant I want to make. Truly, I want to make comfort food, food that makes you feel like you're home.

Something that your mom or dad would make when you had a bad day or to celebrate something special. That one dish you always loved as a child and still do to this day.

Post the dish you grew up on and remember fondly.

For me, chicken fried steak and mashed potatoes.

Chicken fried steak and mashed potatoes is a classic comfy family dish for me too. But, there's lots of others. My mom cooked nearly every day, and on special occasions, there was a multitude of things.
One of the things that makes me feel comfy as fuck was my mom's beef stew, which was a very classic beef stew. But, with the leftovers, she'd put it in a baking dish and top it with homemade buttermilk biscuits and bake it, which also made it's own gravy at the same time.
Also, homemade potato soup when I was sick. Every time. So comfy, so delicious.
Another was fresh strawberry pie. Still my most favorite pie ever.
Mom also made a lot of vegetable dishes. We NEVER had a meal without at least 2 vegetable dishes, and they were never just plain ass vegetables. Roasted, sauced, gratined, casseroled, baked, fried, salads of all kinds, vegetables make me feel super comfy because of that. At least once a week, we'd have a "vegetable plate" where Mom would make (or use leftovers to make) a variety of vegetable dishes and we'd eat all those with a loaf of fresh bread and butter and a plate of sliced tomatoes and onions in vinaigrette.
Oh, and roasted chicken. Man, she made really good roasted chicken.

Sounds great anon, thanks for sharing. My mom never cooked, and when she did, it wasn't that great. Grew up mostly on fast food, frozen dinners, canned soups, and bologna sandwiches. My dad was a truck driver, so he was rarely home. But sometimes if it was just the two of us, he'd fry up canned corn beef hash, eggs, and toast. Then he'd top it off with gravy he made from the fat. It was nothing special, but I remember those times really well.

Yea french onion soup is maximum comfort but personally, when its cold and i feel like shit. I make hot chicken. two slices of bread with mayo on them, some gravy on the chicken, more gravy on top. serve with fries and peas and you cant beat it. Especially if its a really rich and hot gravy with deep brown colors and a really meaty flavor. Its simple, cheap as nails and really delicious.

My family never did anything like that for me and I grew up on tacos and frozen pizza. Most comfort food for me is just heavy hearty stuff I learned to make on my own. Chicken pot pie and beef stew are the big ones. The beef stew has to be eaten with cheddar drop biscuits though. Not bread or corn cakes. There have been days where I've left work pissed off that I stop and get a burger and milkshake.

Seafood Gumbo. Seafood stock made out of frozen shrimp shells, crawfish shells, and whatever else we might have stuck away. Then we'd chop up our celery, onions, peppers, and tomato (I get its controversial but somehow on her recipe it created something incredible). We'd make the roux slowly and get it almost to the point of burning it before slowly working the stock in. And then wed add whatever - sausage, shrimp, crab, crawfish, scallops, or sometimes just some quick blackened chicken. We generally had more stock to roux ratio so it came out soupier than what is traditional, but I'll always prefer it that way.

for me, it's white trash stroganoff:
1lb ground beef
1 can cream of mushroom
A goodly amount of sour cream
white rice for like 4-5 people
chopped pickles
pepper
brown the beef, drain if it's too fatty for you, add condensed soup, and enough sour cream until it looks/tastes right. serve over rice, top with chopped pickles and ground pepper. My dad still makes this and I still love it, it is our humblest dish, I hope to make it for my kids

Fresh egg on hot, steaming rice. Seasoned with just a bit of soy sauce.

It got me through rough times, man. I would be stressed and broke, or too tired, or too heartbroken to make anything but this dish was so easy to whip up and it always lifted my spirits up.

It was what my mom's favorite comfort food too when she was alive. She would usually come home late from the hospital, tired and broken down, and this was what she would whip up most of the time. Sometimes 5 year old me would fall asleep on the living room couch adjacent to the kitchen, and I would wake up from the noise. And she would always offer me a couple spoonfuls before she even had any, kiss me on the forehead, and then tell me to go to my room.

I miss her. This food was associated with my fondest memories of her

My mom never made anything that made me feel like I was "home," and I learned to make the food I wanted when I was ready for it... something I actually appreciated.

Some of my family tried doing this shit (grandmas, aunts, etc.), and it was always awful, so I really don't get the inspiration around comfort food. It's just always been trash from people who don't know how to cook despite a million years of practice.

I'm not even a good cook, really. But going to a restaurant with someone who did it for a living was always nicer than someone who did it as an afterthought to appeal to everyone's lowest common denominator tastes.
