recently I made a very dumb mistake. took a pan out of drawer, quickly washed it but didn't dry it properly. covered it with oil and turned on the heat. suddenly it started to pop like a motherfucker. the

when properly searing, say a piece of chicken, inevitably some of the chicken juice will start to leak out, even if properly brined and patted dry before cooking
additionally, deglazing a pan will ALWAYS lead to spatter, if said pan is properly heated
if i think it’s going to spatter, I cook in a deeper pan, even a dutch over; i have a mesh spatter guard but it isn’t perfect and you have to remove it periodically to flip the meat, etc so spatter still goes all over

Alright lads, I made a thread earlier about cooking a steak and it set the smoke alarm off.
I just now tried to cook a chicken breast and the same thing happened. My roommates think I'm some kind of fucking weirdo now.
The thing is, the steak and the chicken breast didn't come out bad, but the amount of smoke was excessive. The whole downstairs is filled with smoke right now.
There's no exhaust fan anywhere and it sets the smoke alarm off every time.
How can I continue to cook meat like this? What other options or techniques do I have?

I'd never fry in that, the smoke point is likely too low. they have different oil fit for high heat. but in any case, get different oil with higher smoke point, olive is risky.

I'm getting better at making Penang-style curries however I'm missing something that I can't place compared with the ones I get in restaurants. What could be missing? My ingredients are:
Coconut milk
chicken stock
onion
lemongrass
garlic
ginger
chilli powder
star anise
fish/oyster sauce
Bay leaves
Potatoes
coriander
turmeric
green beans
carrots
sugar
curry power
