You don't know what you're talking about. The back half of a cow cannot be included because of the major blood vessels and sciatic nerve need to be removed. This is something that requires a highly skilled shochet. In fact it's one of the main reasons why kosher ox tails are so expensive and hard to find.

I don't have a particular way. I'm a fan of the sonoran dog minus the beans. When I'm making my own, its usually apple+pork sausage with dijon mustard on a standard bun. If I'm at bbq, its a grilled whatever they got on a bun with mustard and potato chips.
