Akara is a great Nigerian recipe. You take black eye beans and soak them in water overnight. The next day, remove their skins (just grab a handful of the soaked beans and rub them together in your hands until the skins start coming off on their own). Once the beans are skinned, you blend them with bell peppers, onions, and habanero peppers (you can use cayenne instead). Deep fry them in oil until well browned.

It's kind of like falafel but smooth instead of chunky and with different spices.
