Lactose post-fermentation is added in lieu of maltodextrin or dextrose or other forms of sweeteners because yeast cannot digest milk sugar. It is a way to add additional body and sweetness to an unfiltered beer without running the risk of creating can-bombs.

I think the quality of craft beers depends on where you're at and what you like. In the bay area there's certainly a lot of shit, but we also have some breweries with a few great beers like Anderson Valley Boont, North Coast Scrimshaw, Bear Republic Racer 5, and Russian River Pliny the Elder. And then there's Almanac (and a few breweries staffed by ex employees), who're the only people on the planet who should be allowed to do memey sours and fruit-tasting beers. Those guys are on their own level. At the end of the day, though, I'm probably drinking a modelo.

Personally I tend to stick to stuff like Corona and Miller light just for the refreshing aspect of drinking a nice cold, not too heavy beer. But there are lots of good local breweries if you want something more substantial. Don't bother with mass produced beer if you want something high quality.

Craft beer is going through a literal golden age right now and you're too stubborn to look past the bullshit made for baby-pallets. These juice-bomb IPAs fly off the shelves/taps cause normies love them, which gives these breweries a shitload of capitol to experiment and takes risks.

The best beer to possibly ever exist has been brewed in the past 10 years/is in barrels currently.
