Moka pot user here. Why does the resulting coffee taste sour? I don't tamp, I use filtered boiled water, filled below the valve, put it on low heat and wrap a cold towel around the pot when it starts hissing. Can't blame the grind size because the beans were fresh before being ground from the place I bought them. Switching to whole bean with a grinder when this batch is finished. Also why does the small bit of leftover water in the bottom chamber smell awful?

Yeah gas gets hotter better. Also for electric hob you want to use the smallest burner and use medium heat, and want to pre heat it. I turn mine on as soon as I set my electric kettle to boil the water for the pot.
I also watch how fast the brew comes out. If it's a little slow I let the brew get closer to the end before I cold towel it; adds more bitters. Also if its just a tiny bit too sour, the smallest pinch of salt fixes it.

Sometimes I'll read the labels on coffee bags and they often do stupid logistical shit like shipping beans from central america to an EU country to get roasted and then they get shipped again to the US to be sold.
And they still sell it for under $6/lbs, Aldi and Ikea both do this and I don't see how it's cost effective unless the green beans themselves cost practically nothing.

Aldi purchase finished products with their label on them and ship them worldwide to their warehouses, so my aldi coffee in australia is also made in germany.
Coffee made in Africa is done in West Africa (Ethiopia where it is native and first discovered 600 years ago), Kenya, Uganda, Tanzania, Madagascar) and some of the largest ports are in those countries.
A 40 foot container will fit roughly 42,000kg of unroasted beans. That is worth over $100,000 USD (the base price of coffee being roughly $2.50 per KG)
The cost of shipping a container from west africa to europe is only a couple thousand at the most.
Shipping is a very minor cost of production in any major worldwide supply chain.

There is that guy's technique of leaving the coffee to brew in the press for 8+ mins, allowing all the sediments and grounds to sink to the bottom. Then he sort of decants the coffee so you have zero sediment in your cup.

That's what I've tried yeah, didn't work. I usually leave the coffee to sit for about 5 mins, press the valve all the way down and pour. I pour it straight into a clear measuring jug, the pour that into the mug, and just before everything is out of the jud I stop at the last 5 or so % because it's full of fine grounds. I then drink the mug of coffee, and even finer grounds make an almost paste-looking mass at the bottom of the mug, part of which is still swimming around in the last sip.

You can try this if it really bothers you, he doesn't put plunger down all the way, only slightly under the surface of the liquid, which helps to prevent the sediments from stirring. Another thing could be your grinder itself is not good enough and produces too much fine particles. Your last resort would be to use a paper coffee filter.

This has a different smell than pure arabica. Not sure how to describe it. Also the grounds are smaller and seem more like real espresso grounds. Brewed up slower I think because of that. Also was really dark and had the appearance of red wine. Black and diluted gets fruity, chocolate, slight sour notes, but then you get this earthy wet, sappy wood notes. It kind of reminds me of pepper trees in Florida, minus the shitty parts of them. Also holds up to half&half really well: kept its dark color. I can see why people might have an aversion to robusta, but I liked it. I know this is a 70%arabica/30%robusta, so it'll be interesting to try the other ones which are reversed.

Yes, but very carefully. Usually now after dunking the filter basket in the grinds, I tap it along the sides to fill in any possible gaps or pockets, then level with a butter knife. That's the main point of "tamping" in a moka pot; to fill any possible gaps. Not so much to compress it like you would for espresso. If there are hidden gaps, it brews too fast and is too bitter.

If I had to go with my gut, this brand had probably been around for a long while, and I think Europe tends to correlate the Americas with cowboys and Indians due to shows being imported from overseas. Coffee noob here, wana start brewing my own. My buddy told me I don't even have to buy a coffee maker, just put the beans in water in a mason jar over night/s in the fridge, then drain out the coffee when I want it. I want to drink ice coffee and add cbd tincture, and I don;t have room on my counter for another appliance (small kitchen) so this sounds like a good method to me.

It's called cold brewing. You grind your beans into a coarse grind and let them sit over a 12-24/hr period in a mason jar if the fridge and then filter it into another jar using a coffee filter after (I've had good results using a tea strainer as a prefilter before putting through a coffee strainer helps cut down on the time to strain). It's actually nice if you don't want or like acidity in your coffee. You can use any beans for it. Don't worry about the bean meme if you're new just buy whatever medium roast or even mass produced canned grounds to try things out and move on to different beans from there.

You can soak the whole bean, but your not going to get a strong result. Just buy one of those Mason jar cold brew kits and either buy ground or get whole beans ground at a grocery store near you. Also don't bother getting coffee that says its citrusy or acidic as cold brew doesn't extract those flavors.

Well, its just overall not very cost efficient. The markup for K-cups is way higher then just buying pre-ground coffee in a 12/16 oz bag, even accounting for packaging. Plus you can't adjust the ratios to your taste, which you sort of hinted at. Its sometimes argued that its great for brewing quickly, but you can brew a much better cup with a slightly lengthened brew time by doing a pour over. Keurig's are a scam, but it is a somewhat attractive/novel way to make coffee honestly.
