I'll start. I tried making my own banh mi today for the first time. Came out pretty good for a first try, not as good as the ones I've had over there, but not a bad imitation by any means.

yes there is a smearing of pate on the underneath everything. Couldn't find actual viet style pate so I made do with belgian which was a bit heavy. There is a bit more pork than what is visible in the pic, but I agree it could use more. Not a fan of soy sauce or pepper personally.

I'm no expert but I'd say it's mostly defined the bread and combination of fillings. I had a variety of types in vietnam, most involved some combination of picked vegetables, coriander - differentiated only by the types of meat. I even had one that had none of the above and had only egg in it. Here is one of the best ones I had with roast pork.

Regular lunch sandwich with turkey, proscuitto, greens, tomato and small amount of jam. I got the bread from some "artisan" bakery and it was awful. Tough to chew through and the flour on the top dried the hell out of my lips.

i found these artisanal breads taste 10/10 when fresh and become really tough and chewy on the next day. thankfully you can get ciabbatas in the supermarket where i am for cheap and it's not such a loss when they suck on the next day.

Another club sandwich I had at a cafe in HK. Weirdly thick slices of cucumber and scrambled egg slathered in mayonaise. Wasn't very good but it was interesting to try. They used something like spam as the meat, but somehow worse.

Yeah this was taken the next day, picked it up on the way home from work, so it had probably been sitting out for a good 12 hours already. I love a good ciabatta but they're hard for me to find. My favourite fillings are either sundried tomatoes/mayonaise and chicken or with chicken pesto and cheese as a pressed sandwich.
