when you're waiting tables you put everything your customers order in a computer, who prints out the orders so you can give them to the bartender/kitchen/whatever. this computer adds together everything that was ordered during your shift, you give that to your manager and get to keep what's left in your wallet. if you somehow get the order to the customers without putting it in the computer you get to keep the money they pay you
