So they can get calories and nutrients in without needing to bother with actual meals. It's pretty straightforward, not sure why anyone would be confused on the motivation there.
That said I've never tried Soylent. Boost is what I've used in the past for that purpose.

Nobody chose to have an ongoing need for calorie consumption. If you enjoy meeting that need through meals you spend lots of time on then good for you, but some people just want a solution to keep their nutrition going with the least amount of thought or effort necessary. Also a shake is much easier to process than a bunch of foods if you're dealing with illnesses of different sorts, which is why nutritional shakes like Ensure and Boost were already around long before Soylent was created.
