Why are you supposed to render all of the exterior fat on a steak? I like the taste of the fat. Is it going to really make the steak taste better?

my tip was steak sandwich was good and the food was good but the service here wasn’t really that great I didn’t have to go there again I tried it to be honest it and I have had been to the last year for sure everyone was here but it didn’t even get me back to the point of a burger

Because you can then confit the steak in its own fat and the majority of the meat will pick up that flavor instead of it being concentrated on just the edges. If you just want to eat the fat thats fine, but youre essentially depriving the rest of the meat of flavor. Why not just buy a cheaper fatty cut at that point? (Im assuming we are talking about the Ribeye, king of steaks.)

What are you supposed to do with the fat piece between the cap and the eye? It doesn't render before overcooking the meat if the steak is thicker than like 2 fingers.

I like to cook it so that there is some fat left inside a crusty shell on the outside. Pork chops are especially good at this but the same holds true for beef steaks.
