Last summer I still worked in a kitchen, and came up with this. Cheese ravioli tossed in sauce made from roasted heirloom tomatoes, topped with crispy prosciutto, grated parm, and arugula dressed with lemon and olive oil.

For me, summer means BBQ cookouts. Pulled pork, steak, brisket, bacon-wrapped hotdogs topped with fried eggs, etc. and the sides like potato salad, slaw, grilled veggies, chinese chicken salad, watermelon, etc.
Also, picnics. Taking your favorite sandwichs, cheeses and cured meats, and a bottle of wine out in nature or at a concert is always nice.
Homemade ice cream and milkshakes are great when you can't stand the heat any more. Shitty popsicles and ice cream sandwiches are a fun too.
That said, other than the food I make for parties or with other people, I don't really change what I eat that much in summer.

Definitely not the biggest fan of turning the oven on in the summer but it's when the vegetables are in season. I'm a baker regardless though so the hot oven doesn't bother me too much.

For the sauce, I peeled and quartered good heirloom tomatoes, then roasted them with cloves of garlic and a couple sprigs of thyme until they started to caramelize to the pan just a little bit, then deglazed the pan with a little white wine. Purée the tomatoes, and then heat sauce to order, finish by stirring in a bit of cold butter before tossing with the ravioli. Garnishes are pretty self-explanatory, all done to order.

Chicken danoise is one of my favourite summertime meals.

Whole roast chicken, served with rhubarb compote, new potatoes and pickled cucumbers on the side, and with gravy made from drippings and roast veg.

It sounds a little strange, but it really is a great dish.
