Do loaves like this require a dutch oven?
I always wanted to make sourdough, italian or even french bread but everytime I find a recipe, they say to use dutch ovens.

I make all of mine in one. just a cheap $20 chinese one, you don't have to shell out for staub or le crueset if you're just making bread. still works good for other things too.

Yes, the loaves need steam in order to rise evenly before the crust dries out enough to crack open. You could also steam your oven, but I don't think that does as good a job. Proffessional bakers use ovens with steam injection or full size brick ovens with air tight seals that trap all of the steam generated from a large batch of loaves. Look up a lodge combo cooker for something smaller if a dutch oven sounds like too much space. I think enamel works better too although that's not what I use.

That really depends on the bakery that you're at, I think. I just hired a new assistant baker and he said at his old bakery most of his shift consisted of just sitting around waiting. We have a really small space here and a lot of bread to make, but we have things streamlined in such a way that with some quick work we can do about 1,500 loaves in 10 hours.
