Ok this is my recipe, also I’m not Eastern European but I’ve eaten the real thing in Slovenia/Croatia several times:

>minced pork meat: 250 gr
>minced ground beef meat: 250 gr
>sweet paprika: 1 and a half spoon
>onion: 1 medium
>garlic: 1 clove
>salt and pepper
>half a spoon of white flour
>(optional) —> minced lamb meat: 100 gr (in this case use 200 gr of pork and 200 gr of beef)

Toss all the minced meat in a bowl and start working it with your bare hands, mix it for at least 5-6 minutes.

Put the onion and the garlic in a mixer and let it chop everything until you have small pieces.

Flatten the meat in the bowl and dig a hole in the centre, then toss the minced onion/garlic, the paprika, the flour, salt and pepper.

Keep mixing everything for another 5 minutes and when it’s smooth and fine make the turds. Usually they should be tubes long 5 to 7 centimetres but make them like you can lol.

Cover the turds and put them in the fridge for 30-40 minutes, then take them out for 30 minutes and cook them on the grill.

Done.

Waited for confirmation, but I immediately thought there was pork in there when I saw >>12442955. You left the grill pan on either for too long or too high a heat and they got a little too seared on the outside in the time it took to cook them through the middle. The presence of the meat likely cooled it down a bit (and probably being compensated by the heat) so they turned out okay by >>12442961.

Looks nice and savory overall, but I think for that amount of meat I'd want perhaps 2-3 large cloves of garlic and perhaps something a touch stronger than sweet paprika.

I've tried making some kebaby gyro log meatball things on the bbq before. Combo of lamb and beef with garlic, mint, and spices. Pretty awesome.

Been meaning to try making it again but use the smoker this time.

I removed the black crust from the ones which were burned and they were nice and juicy inside, so I’m happy.
