Compared to Italien and asian food I'd say yes. Bratwurst with Kraut (I'm from Bavaria where the sour kraut is actually pretty sweet, I highly recommand), Schäuferle or Haxn can be pretty salty.
But you always order a cold beer to compensate for it.
I'm honestly not a very big fan of the more northern german food, for me it's the Bavarian and the very close to this, Austrian, food.
Especially sweet stuff like cake or desserts, for example Apfelstrudel or Kaiserschmarrn should be given at least a try.

But to sum it up, yes german food is actually pretty salty.
