Wetting the top of the cheese might have some problems in your browning. Sauce is on ladled on top in chicago style, and thus, no browned cheese, but it simmers the ground sausage nicely to doneness, and the separate nature of the oils, tomato and parm above the thick oozy cheese is nice. .
However, I find dampened veggies, or oiled veggies, and whether they are above or below the topmost ingredients helps them to brown nicer and get more well done. A thinly sliced onion, sliced mushroom or thinly sliced pepper can get a nice char on top if rubbed with a little olive oil before placing on a pizza. Nothing is worse than uncooked peppers on top.
In general, a thicker crust bakes longer and can handle thicker toppings, whereas a thinner crust will have issues with too much on top, either too much wetness, too much cheese, and crust can burn before a doneness in the toppings if you don't get the balance and ratio just right. Practice balancing all of it is a bit of trial and error and eventual experience. I suggest you try what you want, and discount it for future endeavors by way of your own experience and tastes.
