Full skirt steak? Cut into thirds due to thickness variance. Rub with garlic, olive oil, maybe a little lime juice or balsamic, and light your grill.
Flip a few times, basting with more marinade.
Remove from grill when medium well. Rest.
Or broiler inside. This steak has great marbleing and can be cooked well done, and in fact the fatty ribbons get deliciously crispy and break down a bit of the muscle toughness, making it ideal. Serve with a whirled up batch of chimmichurri. Serve with delicious rice and beans, roast potatoes, vegetables, queso frito, slaw. Slliced against the grain (do it on a diagonal or break up steak into sections first, it's the meat of choice for fajitas. I love a skirt steak for on top of salad, whether cobb or thai salad like tiger's tear. If you pound it, skirt is a good steak to wrap around items like asparagus and grill with a glaze of teriyaki.
It's also good eating outright with a little dip of A1, your baked potato, etc.

I made a marinade: Hoisin, fish sauce, vinegar, sugar, garlic. Let it sit room temp for an hour. Then I dried the surface of the meat and seared the pieces up. Cooked to a perfect med-rare, and I poured the marinade into the pan to reduce to a glaze. Finished up the steaks in the pan with the glaze. Dinner for the next few days.

Get some natural wood charcoal. Make them bitches hot. Place skirt steak directly onto coals. Remove, brushing off as much charcoal as you can, and put into tight foil pouch once the outside is nice and cooked. You'll get a bit of grit from excess ash but damn if it ain't a good piece of meat (if you like charcoal flavor, I do).
