I'll admit it, I'm Australian. We have scones but they're exactly the same as British scones. Butter and jam, or vegemite, or golden syrup is the go. We don't have these American biscuits and it's confusing because when you say biscuits and gravy it sounds not very nice, like cookies and gravy.

It's called gravy because it's fat + thickening agent + liquid. We do also have brown gravy, such as you might eat with roast beef or spoon onto mashed potatoes.

The gravy on American-style biscuits and gravy is made with the fat rendered out while cooking breakfast sausage, usually a loose, un-cased variety that's strongly flavored with sage. Once that's browned, flour is added to form a roux, and then milk is added to make a cream gravy. It's heavily seasoned with pepper and is often known as pepper gravy because of that. Sawmill gravy is another term.

Not really. Biscuits are savory, buttery, fluffy, and usually paired with things like eggs, sausage, and gravy. Scones are dense, less buttery, and sweet in my experience.

The gravy is traditionally pretty thick and doesn't penetrate the biscuits quickly. Unless you just let it sitting there for an hour, the biscuits should retain most of their structure.
