Shit image as so many are European. For reference, some high quality American cheese makers include rogue creamery, point Reyes, cypress grove, Laura Chenel, cowgirl creamery, jasper hill, Marin creamery, Vermont creamery. Those are just the ones I can think of off the top of my head and I mainly know California cheese makers and a couple Vermont ones. I am aware of more in wisconsin, Oregon, whatever. Lots of these creameries are making high quality original cheeses with no direct European equivalents. Am I saying that one regions is better than the other? No. Am I saying that European cheeses haven't had huge influence on American cheese makers? Obviously not, that's fucking stupid. Many of these cheesemakers go to Europe to tour and learn about the craft and then come here and make their own original creations. American cheeses can stand on tbekr own but they owe a lot to European traditions.

Good cheese is often made from milk produced by small farms so they can ensure it's quality. Small farms means small amounts of milk which means they can't produce as much product as they'd like to in many cases. You're also paying for products that have been aged for decent chunks of time that are checked by hand every day. There's years of experience and craft going into these cheeses that you don't get from factory stuff. It's the same reason why handmade furniture would be more expensive than IKEA
