Because Westerners never really willingly consumed sóy in significant quantities. As soon as food manufacturers started using textured sóy in processed meats is around the time that fertility and testosterone levels in westerners started dropping. Soylent is basically just doubling down on it and the men who consumed it are happy with the way Western society has devolved.

Why would food companies be afraid of this? It's like the shit the unplugged people in the Matrix ate. At most, a large company like Coca-cola or Pepsico would launch their own brand like they do with popular drink trends.

I'd normally think not, but food (specifically butter) companies were afraid of margarine for a while because it was a cheap alternative to butter. So what they did was try their best to demonize it; create campaigns trying to associate margarine with death and disease, try to get the government to force margarine makers to color their margarine pink (again to link it to life/death)... point is, I wouldn't put it past some food companies to be dumb enough to facilitate a literal shitpost campaign against a new, affordable(?) food because they're scared that it could cut into their profit margins.
