I usually reheat pizza in a pan of some sort and it's really fucking good. It gives a complete different texture to the crust making it crunchy. Tough i'm not sure it would work if i din't use it on a baked pizza.

Okay so you
1. Finish the dough, after like 1-2 days of rising
2. Oil the pan
3. Knead evenly into the pan
4. Make the pizza
5. Heat it... without a lid? With??

cast iron pizza is easy and good. even super basic dough with a 1 hour rise comes out great.

heat up the cast iron on the stove top until the dough starts sizzling and then pop it into the oven set as hot as possible. not as good as a real pizza oven but still damn tasty.

have a stone but still make pizza in the 12 inch cast iron to change things up
preheat the skillet in the oven for 15 minutes and then put in the dough and toppings and back in the oven for about 15 minutes

be careful, the pan is fucking hot when making the pizza, but you get a nice crispy crust

my oven goes up to 550, and at that temp the toppings are perfectly browned and crisp after about 8 minutes, while the dough is still under cooked. getting the pan hot first has always given me perfect crispy bottoms.

>> No.12392732

>>12392303
It creates a different crust, and gives you a deeper pie. In particular, cast iron heats up and holds heat well. When you cook it in a CI pan you'll use a relatively large amount of olive oil as well, which fries the dough instead of just baking it like with a pizza stone.
