I made this bomb-ass Moroccan couscous. Turned out great, lots of flavor and color, will definitely make again in the future. Also the first time my couscous turns out good, I guess the package directions just don't use enough water for whatever reason.

>olive oil
>2 cans chickpeas
>salt & pepper
>2 onions, diced
>1 red bell pepper, diced
>3 garlic cloves, minced
>2 teaspoons smoked paprika
>1 teaspoon cumin
>1/2 teaspoon turmeric
>1/2 teaspoon cayenne
>1 teaspoon coriander
>1/2 teaspoon cinnamon
>2/3 cup frozen peas
>2/3 cup shredded carrots
>2 cups beef broth
>1 cup dry couscous
>2 tablespoons fresh mint, chopped
>1/3 cup raisins

Set a skillet on medium-high heat. Once it’s hot, add a little olive oil then toss in the chickpeas. Add salt & pepper as they're cooking. Cook for a few minutes and reserve.

Reduce the heat to medium, and add olive oil, garlic, onion and bell pepper. Cook until onions start turning translucent, then add the seasonings. Cook for about 30 seconds, ensuring the onion and bell pepper are covered in oil and spices.

Fold in the frozen peas and carrots, then pour in the beef broth. Once it begins to simmer, add the couscous. Fold everything together then remove the skillet from the heat. Cover and allow the couscous to absorb the broth, about 5 minutes.

Mix in the chickpeas, raisins and mint. Top with more chopped mint and serve.
