If you have the money to trow away then convenience is just more appealing. Sure you could save that money and then cut, wash the dishes and risk making a mistake. Or you could just buy the thing and save some time and money.
This is why many people go to restaurant in the first place. they could cook everything they order at home with enough time and practice. but it's more convenient to just go out and eat food done by someone who already made the effort needed to prepare a proper dish.

A block of cheese is ends up about 2 cups after I shred it and a bag of preshredded cheese is about 2 cups and both of those are like 1.69 because I buy store brand. So the only choice to be made for cheese is do I value laziness over quality because it tastes so much better when I shred it myself.

But otherwise no. Things like prechopped fruits and vegetables are not worth the markup. I assume they sell well enough though since my grocery stores continue to sell them. I don't imagine they have a long shelf life either especially the fruit.

I think what OP was getting at is that these produces are aimed at people who can't really afford to waste it in this fashion, but don't realise it because they don't know the value of money vs time.

If you earn $500 a day, then yeah it's worth the extra dollar for the minute saved based on how valuable your time is. But I'd really hope someone earning that much would not be shopping at Walmart buying cheap shitty ingredients.

the value of a person's time is determined by more than just their hourly earnings. a person working two minimum wage jobs could have very little time to cook and find it worth while to put some pre shredded cheese on their own burger instead of eating out.

I agree those price differences are stupidly wrong, even gross greasy Velveeta is a niche product that is the opposite of inexpensive, only bought by people who want it and not real cheddar.

I'd say 2/$6 is the usual sale price of Cracker Barrel 8oz blocks, and a 1lb block of good store brand is going to be $4.99

Bags of preshred is about the same price give or take 30c or so upcharge or sale savings. It's minimal.

People who cook more than you, either for 1 person or for a crowd of persons can and will find value in some convenience foods. For example, that guy who bought a stack of flour tortillas, to make himself 1 single quesadilla a night will find the shreds uncontaminated by his hands, and won't be cleaning his grater or packing up the block over and over into a ziploc hoping it doesn't mold over between uses from repeated hand and air contact.
The family cook that does know what they're doing will absolutely know that grating it yourself is going to yield shreds that melt better on a pizza or casserole topping or within a homemade mac n cheese bechamel becuase it's not coated with separating starches, and because they're going to grate the block all at once, or only once or twice, won't mind cleaning up from the extra mess of a cutting board and grater because their oven is going to be on a while anyway.

I don't know how much consumer/small portion versions of this shit go, but I work with and buy pre-cut cheeses because the difference between pre-shredded/sliced cheese and a regular block is about ~10 cents a pound, usually less and sometimes its even cheaper depending on the type of cheese.
It's all about purpose.
