It isn't always just pure ethanol, a lot of alcoholic drinks contain byproducts and "off-alcohols", and besides that different companies will do better or worse jobs of distilling and filtering. This doesn't even take into account that they start with different water. The only thing you're partially right about is that there are some premium priced brands that aren't any better and are maybe worse than cheap or mid range ones

I can tell you right now that the vodka I make from a dextrose wash tastes different to the vodka I make from a sucrose wash, potato wash or grain wash. And I use a reflux still, not a pot still.
Pot stills generally return spirit at about 60% abv, which means 40% of the volume of spirit is drawn from the wash. If you don’t think that 40% doesn’t have an impact on the taste and the texture, all I can say is wait until you’re old enough to drink and you’ll learn more about it then.

Sobieski is king. Consistently places at the top of blind taste tests. There's only a handful of expensive vodkas that can edge it out, and nothing in the $20 range comes even close.

Something to note about any consistent alcoholic drink is that after a few hundred bottles of it, you won't hate it. No matter how shit it was on day 1, by day 1000 it'll taste like nectar of the gods.
Pic related has a very specific taste to it, due to added sugar which is why it's not legally sold as a vodka here. And it tastes awful compared to its 40% counterpart which is an actual vodka.
