I don't want to talk too much about it, because I'm working on actually doing it. But, in a nutshell, I want a small place, no more than 10-15 tables, maybe with a few tables outside if possible. Small staff, myself and just 3 staff to start, and hire on as we go. Simple decor, nothing kitschy or trendy that would look dated in a few years (I've already decided on most of it). As far as what we're going to serve, I don't want to talk about it, but it's something that most people like and yet not very common in restaurants.

I would open a small restaurant with typical American breakfasts (omelettes, pancakes/French toast, eggs with meats, etc) except I would personally make the gravy/French toast dip/etc to make sure it’s absolutely based, and I would make a bunch of omelettes that would absolutely enlighten tastelets because I’m not a fucking pleb.

Lunch would be based sandwiches, burgers, fried foods, salads, breakfast still available. Again, I would make my own combos because I’m not a tastelet and it would be amazing. I would also fry a very large number of different veggies.

Dinner would not include breakfast, probably include lunch stuff, and would definitely be barbecue because a non-steak restaurant selling steaks is always trash. Just make some barbecue with homemade barbecue sauces that as before would be homemade and based because I’m not a tastelet.

I'd go for a modern looking place without getting into the "pure" post-modern look and have a large bar + more counters all around the wall with high seats, and small tables in the middle. I'd offer small portions of most everything that can be reasonably prepared without specialised equipment or chefs and the menu would offer to mix and match your prefered meal.

The idea is to attract businessmen and other solo eaters who often eat out and want to get a variety of stuff without paying too much or going somewhere else. You'd just take a seat at the bar and order what you feel like having that day, maybe a slider, some lasagna and some chicken fried rice, and if midway you want something more you'd just sgnal a waiter and ask for it, knowing it'll come soon.

Cozy rustic decor with cushy seats, lots of wood, big fireplace for winter, a large outdoor patio with partial cover for warm rainy days and a decent view of something natural.

A nice long bar, wood with translucent resin portions embedding some greenery. Food service at the bar stools.

I'd open a Portuguese restaurant (even though I'm German.) We'd serve typical Portuguese food like bifana sandwiches, bacalao, pork and clams, vinho verde, etc.

2 options per lunch and dinner service. like you pick a dish and it is a complete meal. even has a small appropriate dessert included. which comes after the meal is finished and dishes bussed. either option has a set of wine and beer options. some sort of fresh bread and butter for the table.
