I think the trick in these situations is to find some type of bridging ingredient. Something that works well with both separately and will help the two weird ones come together.

This is actually potentially a pretty cool recipe. Make a vanilla ice cream base but steep the milk and cream in celery before tempering the yolks in. Then, strain and finish the base. Wa-la, celery ice cream.

Roast the bananas till the skins brown, then make a dope ass spiced banana coconut brown butter cake.

Get some celery root, and make yourself a mousse or a pastry cream to fill the cake, then you got yourself a dope ass banana coconut cake with celery root cream and celery ice cream. You can even garnish with celery leaves and caramelized banana slices
