When you started being a vegetarian, did it feel weird? Was it hard to change?

Did you guys discover lots of food after becoming a vegetarian or were you already familiar with most vegetables?

When adapting recipes, do you guys substitute meat for something else or do you just remove it?

Being vegetarian and then a strict vegetarian I've learned tons of new foods, recipes, and flavors. It's opened my eyes to studying nutrition and I personally feel like a better person because of it.
Women tend to see it as a passion which I've been told is sexy many times. My skin looks better, I have more energy, and my hair looks nicer.
For recipes simply take a recipe you liked before and substitute potatoes, tofu, seitan or just leave it out like you said.
Buy a few vegan/vegetarian cookbooks.

I did it slow, no beef, then chicken, then fish, then vegan. I was 21, skinny-6 packed twerp. Now at 37, I’m a chubby-grill seargeant carnivore. I didn’t feel any different either way.

I just stopped eating meat and ate more cheese/eggs. I still ate a lot of vegetables, beans, etc. even before trying a vegetarian diet. It wasn't hard, but I did get strong cravings for meat after a few years and started eating it once a week. But I think going vegetarian as long as you can is a good thing considering most people mindlessly eat meat and don't care about the animals dying for it.

You have to substitute the meat for something else high in protein though, otherwise it won't feel satisfying to eat. Cheese, eggs, peanut butter, vegetarian meat alternatives, etc. will work.

got a vegan wife who does not mind cooking meat for me or even cooking certain things in the same pan she just prefers the way she eats. we settled into a pattern where we pretty much cook vegan and then I adulterate it and make it vegetarian or she makes me some meat on the side. I wind up vegetarian most of the time and don't mind it and it has been easier on me both in terms of weight and health. I was the one who turned her onto a lot more vegetables she thought she didn't like.

the gist of it is that vegetarian will force you to look into different types of cuisine and ethnic flares to spice things up and add variety. Recipe adaptation is extremely easy. Tofu taste like whatever it's cooked or marinated in and will sear well in a proper non stick pan. Lots of mock meats also pass muster and that's the opinion of an omni. gardein and morning star farms strips and crumbles are good. Vegetarian wise eggs are also supreme. You can prep them so many ways and they add protein and richness to almost anything.

I always kind of got freaked out by meat so transitioning was quick when I went away to college.
32 yr old boomer now. You get good at cooking. It’s pretty amazing how more vegetarian friendly restaraunts have become even over the last couple of years.
When I first started I ate a lot of imitation meat. I rarely if ever eat that now. Now I make big batches of Seitan. Also lots of Mexican dishes for the protein in beans.
It did make me a lot more adventurous in my eating. I’ll try anything now if it is meat free.

3-4 years ago. It didn't feel weird at all, I've never slabs of bone-in meat and having to dig around the cartilage, gristle, and skin to found the edible bits. It was an extremely easy change for me. Giving up dairy, now that was hard.

I discovered I really like brussels sprouts, okra, cabbage, and beans other than in chili

I wouldn't say it felt too weird, though i did forget and eat some peas that had meat in them about 3 days after i switched. took me half the bowl to realize. i did have nightmares where i'd eat meat accidentally and wake up feeling bad about.

as far as recipes i haven't suffered at all. i missed beef jerky, louisville vegan jerky is great (don't eat too much though you will get the shits)
also Gardein and Morning Star has alot of burgers, fake hamburger meat, 'chicken' patties, 'chicken' tenders, grilled 'chicken' stripes. season them right and they're damn good.

cauliflower is my favorite lately. cauliflower wings are amazing and not too hard to make.
